Maintaining a high level of food, drink, and service is both demanding and invigorating at the same time. Pride is a motivator.
Once a high level is achieved overall, the desire to get even better is an incentive. Although the pressure can be unrelenting, it’s the nature of the beast. Tame it so you can enjoy it.
